A few months ago one of our favourite bloggers Mellow Mummy agreed to test out and review a selection of products from our Get Together range. She’s a first time working mum who likes to approach life the mellow way. By day she writes computer software and by night she’s a mum.
A huge fan of cooking and entertaining, she shared her thoughts on our Get Together Range last year and now, a few months on, we’re pleased to report she’s still enjoying the range and remains an inspirational baker! Here she shares her Cheery Cherry Cheesecake Recipe with us:
This is a recipe that was handed down to me by my mum and which I have been teaching my own pre-schooler.
It is an incredibly simple yet satisfying cheesecake that requires no cooking. Don’t be tempted to use low-fat cheese to make it (it will flop if you do, I KNOW this from experience).
Ingredients:
- 250g digestive biscuits
- 100g melted butter
- 600g full-fat soft cheese (such as Philidelphia)
- 100g icing sugar
- 280ml double cream
- 1 can or carton of cherry pie filling (you can find this in the baking or ice-cream topping area of your supermarket)
Method:
- Grease and line the bottom of a lose-base tin (ideally about 23cm in diameter).
- Bash the digestive biscuits with a rolling pin. You can do this inside a plastic bag if you don’t want to make as much mess as we did! Then pour the melted butter over the crumbs and give it a good mix. Turn the crumbs into the baking tin and then press them down hard. Chill the base for about 30 minutes to 1 hour.
- In a clean bowl beat together the cheese and the icing sugar until well-mixed and fluffy. Then carefully mix in the cream until it is thick and fully combined. The mixture should be stiff but spreadable. Spread it on top of the biscuit base and then chill the cake for at least another hour before putting on the topping.
- Shortly before serving, spread the cherry pie filling on top of the cake and then REALLY CAREFULLY remove the outside of the baking tin to place the cake on your shiny Brabantia Get Together cake stand! Finish it off with a sprinkling of grated dark chocolate. Nom.
